Sugar Free, Low Carb, THM S, 100% Amazing
I use the same basic Trim Healthy Mama ingredients over and over again. It can be costly to stock your pantry with too many baking items, and I have learned to use my favorites over the years. It can be overwhelming or frustrating to find a new recipe that you want to try, but you may not have those supplies on hand. So then you try to substitute too many different ingredients, and before you know it your brain is a hot fuzzy mess, and your dessert is a hot fuzzy Pinterest fail.
That scenario almost happened today in my home. I wanted so desperately to make peanut butter frosting with my amazing trimtastic chocolate cake. (Trim Healthy Table.) I had my daughter send me the link for the frosting recipe we knew we loved, but once I opened it I knew we had a problem: we were missing some of the ingredients. I realized I needed to take a minute to get myself together and create something using the things that I normally keep on hand.
So without further ado, I share with you my version of peanut butter frosting. Every person in my home tried it and raved about it. Even the Littles that do not care if something is healthy or not. It seriously tricked them into amazingness. I hope you enjoy it too!
Peanut Butter Lovers Frosting
Frosts one double layer cake, with leftovers that can be frozen for ice cream for 2-4 people.
(2) 8 ounce packages of cream cheese (can use reduced fat as well).
Half a cup +1 Tablespoon of Gentle Sweet
1 cup of healthy peanut butter
1 Tablespoon of vanilla
1/4 teaspoon of Mineral Salt
1/4 cup of half-and-half
Optional: 1/2 cup on plan chocolate chips melted in a microwave safe bowl with 1 Tablespoon of coconut oil for drizzle topping.
Mix all ingredients together until blended. I put each ingredient in the Kitchen Aid and let it do its job. Once mixed, it is immediately ready to spread.
Drizzle with half a cup of chocolate chips melted in the microwave with 1 tablespoon of coconut oil if you wish.
