THREE INGREDIENT WINNERS!!!!!!!
I didn’t believe the recipe when I first saw it online, but it’s true and I feel morally obligated to share it with you!
We tweaked and tested, and after one disappearing batch, we knew we nailed it and turned around to make a double batch.
They are all I have eaten today. (Total Crossover territory there, but Sunday’s seem to be my XO day…) And I’m okay with that. Do yourself a favor a go to the kitchen right now. In twenty minutes your life will look brighter, promise.
Oatmeal Chocolate Chip Banana Cookies – THM E
Preheat the oven to 350 and line one baking sheet with parchment paper.
2 bananas
3/4 c. Ground oats ( in the coffee grinder )
3/4 c. Whole oats
1/2 c. On plan chocolate chips (We are chocolate lovers, and we could’ve used less and not missed them… and stayed closer to E territory.)
I had a mix of chocolate chips in my glass canister because #coronagroceryproblems, but they were somewhere between Hershey’s Sugar-Free Chocolate Chips, Bake Believe Chocolate Chips, and Trim Healthy Mama Chips. Take your pick. Read the label for your choice to be able to keep it under 5 grams of fat.
Mash the bananas into small pieces in a baking bowl. Add both types of oats until mixed. Add chocolate chips.
Form into a cookie in your hand and place on parchment paper cookie sheet. The cookies will not expand or change shape while baking.
Bake them in the oven for 12-15 minutes at 350 degrees.
We made a double batch immediately after the first disappeared, and it doubled beautifully.
1-2 cookies would be a safe E size serving. Otherwise, just know that you are Crossing Over. Still on plan, just not burning fat at snack time…❤️)
You could do raisins, cinnamon, vanilla, nuts… anything. Of course that could change your fuels too, but if you’re not afraid, I’m going with you!
